HAMBURGER SOUP

4 potatoes, peeled and diced
4 large carrots, peeled and sliced
2 celery ribs, sliced
1/2 onion, diced
1 tsp salt

Boil in water until tender. Do not drain.

1 cup browned hamburger
1 envelope brown gravy mix
1/2 cup frozen peas
1/2 cup frozen corn

Add to boiling pot. Bring to boil again.

1 cup crushed pineapple drained
1 cup cool whip

Cherry Cake

1 (18 oz) box French vanilla cake mix
1/2 cup (1 stick) butter, melted
2 eggs
1 (20 oz) can cherry pie filling
1 cup chopped pecans

In a large bowl, mix all ingredients by hand. Pour into greased and floured bundt or tube pan and bake at 350 degrees for 1 hour.

Restaurant-Style Hashbrown Casserole

1 (2 lb) pkg frozen hash brown potatoes, thawed
1/2 cup butter, softened
1 tsp salt
1/2 tsp ground black pepper
1/2 cup chopped onion
1 can cream of chicken soup
2 cups shredded cheddar cheese

Preheat oven to 350 degrees. Spray one 13x9-inch pan with non-stick cooking spray. In a large bowl, combine the potatoes, butter, salt, pepper, onions, soup and cheese. Gently mix and pour into prepared pan or dish. Bake uncovered for 35 minutes.

Justin's Hoosier Daddy Chili

1 pound ground beef1 medium onion, chopped1 teaspoon red pepper
flakes1 tablespoon ground cumin2 (10.75 ounce) cans
condensed tomato soup2 (14.5 ounce) cans
chicken broth1 (14.5 ounce) can
crushed tomatoes5 tablespoons chili
powder1 teaspoon ground black
pepper1 teaspoon salt2 (15.5 ounce) cans pinto
beans, drained (optional)cayenne pepper to taste

Crumble the ground beef into a soup pot over
medium-high heat. Cook and stir until evenly browned. Drain off most of the
grease. Add onion, red pepper flakes, and half of the cumin; cook and stir
until onion is tender. Pour in the tomato soup, chicken broth, and crushed
tomatoes. Season with chili powder, salt and pepper. Simmer for 30 minutes.
Pour in the beans, and season with remaining cumin and cayenne pepper; simmer
for another 30 minutes.

Chocolate-Peanut Butter Drops

1 cup sugar
1/2 cup light corn syrup
1/4 cup honey
1 (12 oz) jar chunky peanut butter
4 cups chocolate-flavored frosted corn puff cereal

Combine first three ingredients in a Dutch oven and bring to a boil, stirring constantly. Remove from heat, add peanut butter and stir until ingredients blend well. Stir in cereal and drop by tablespoonfuls onto wax paper. Cool.

French Bread Chicken Pizza

1/2 pound ground chicken thighs
1/4 cup fresh cilantro -- chopped
1/4 teaspoon ground red pepper
1 pound French bread loaf -- about 16 inches long
1/2 cup tomato sauce
2 tablespoons pesto sauce -- commercial
4 plum tomatoes -- thinly sliced
2 ounces mozzarella cheese, part skim milk -- shredded
2 ounces fontina cheese -- shredded

Cook chicken in a medium-size nonstick skillet over medium heat until
browned, stirring to crumble.

Drain and pat dry with paper towels.

Combine chicken, cilantro, and red pepper in a bowl; set aside.

Slice bread in half lengthwise; place bread, cut side up, on a baking
sheet.

Broil 5 1/2 inches from heat 1 minute or until lightly browned.

Remove from oven, and set aside.

Combine tomato sauce and pesto sauce; stir well, and spread evenly
over cut side of bread halves.

Top with tomato slices and chickeen mixture.

Sprinkle with cheeses.

Broil 5 1/2 inches from heat 2 minutes or until cheese melts.

Cut each bread half into 4 pieces.

beans with pork1/2 cup packed brown sugar1/2 cup ketchup1 tablespoon
Worcestershire sauce

Preheat oven to 350 degrees. In a casserole dish,
combine beans, brown sugar, ketchup, and Worcestershire sauce. Bake, covered,
for 45 minutes or until bubbly.

Taco Quiche

2 lbs ground beef
1 envelope taco seasoning
4 eggs
3/4 cup milk
1 1/4 cup Bisquick mix
1 dash pepper
1/2 cup sour cream
2-3 cups chopped lettuce
3/4 cup chopped tomato
1/4 cup chopped green pepper
1/4 cup chopped green onions
Black olives, sliced, optional
2 cups shredded cheddar cheese

Brown ground beef; drain. Add taco seasoning. Spoon into greased 13x9-inch baking dish. Beat together eggs, milk, Bisquick and pepper. Pour over meat. Bake at 375 degrees for 20 minutes, until golden brown. Cool 5-10 minutes. Spread sour cream over top. Sprinkle with lettuce, tomato, green peppers, green onions and cheese. Makes 8 servings.

White Chocolate Fudge

1 (8 oz) pkg cream cheese, softened
4 cups powdered sugar
1 1/2 tsps vanilla extract
12 oz almond bark, melted
3/4 cup chopped pecans

Beat cream cheese at medium speed with mixer until smooth. Gradually add sugar and vanilla and beat well. Stir in almond bark and pecans. Spread into buttered 8-inch square pan. Refrigerate until firm. Cut into small squares.

Impossible Hot Fudge Pudding Cake

1 cup Bisquick baking mix
1 cup sugar
3 T unsweetened cocoa powder
1/3 cup unsweetened cocoa powder
1/2 cup milk
1 tsp vanilla extract
1 2/3 cups hot water

Preheat oven to 350 degrees. Grease an 8-inch square pan. Mix Bisquick, 1/2 cup sugar and 3 tablespoons cocoa powder. Stir in milk and vanilla until blended. Sprinkle evenly with remaining sugar and cocoa powder. Pour water over top. DO NOT STIR. Bake 40 minutes or until top is firm. Dust lightly with confectioners' sugar if desired. Spoon into dessert bowls while hot. Tastes great with a s coop of vanilla ice cream or whipped topping on top.

Dos Queso Dip

1 (16 ounce) container
sour cream1 (8 ounce) package cream
cheese, softened1 (1 ounce) package taco
seasoning mix2 cups shredded Pepper
Jack cheese1 cup salsa1 teaspoon dried, crushed
Mexican oreganosalt and pepper to taste

Preheat oven to 350 degrees. In a medium bowl, blend
sour cream and cream cheese until smooth. Mix in taco seasoning mix. Stir in
salsa, Mexican oregano, salt and pepper. Transfer to a 9x13 inch baking dish.
Top with Pepper Jack cheese. Bake in the preheated oven 10 minutes, or until
cheese is melted.

3 lbs potatoes, cut into wedges
2 sticks butter
3 onions, cut into wedges
dash of garlic salt
2 bay leaves
dash of celery salt
salt and pepper to taste
dash of basil

Preheat oven to 250. Place onions, butter, potatoes, and seasonings in
dutch oven. Cover and bake in oven for about 3 hours.

CHICKEN WITH RUBY GRAPEFRUIT & CRANBERRY SALSA

2 tbs flour
1 tsp paprika
1/2 tsp salt
4 skinless boneless chicken breast halves
2 tsp oil
SALSA
16 oz can whole berry cranberry sauce
1 large ruby grapefruit, peeled and white pith removed, cut in sections, sections halved
2 tbs each sliced scallions and mint
1 tbs minced seeded red jalapeno pepper
1 tbs chopped crystallized ginger

Mix flour, paprika and salt in a plastic food bag. Add chicken, shake to coat. Heat oil in a skillet. Add chicken and cook, turning once 8 min. or until browned and cooked through. Mix salsa ingredients in a bowl to blend. SERVE WITH CHICKEN. Makes 4 servings.*

DRIED TOMATO ALMOND TAPENADE

2 cups dried tomato halves
Hot water for reconstituting
2/3 cup whole natural almonds, toasted
1/3 cup water
2 oz can sliced olives, drained
3 tbs olive oil
1 tbs dried basil
1 tbs lemon juice
2 large cloves garlic, coarsely chopped
Salt, to taste

In bowl, cover tomatoes with hot water, set aside 15 min. Place almonds in bowl of food processor, process, pulsing off and on until coarsely chopped. Remove almonds, set aside. Drain tomatoes and add to bowl of processor with remaining ingredients, except almonds and salt.

Process until almost smooth. Add almonds, pulse on and off to blend thoroughly. Season with salt. SERVE WITH BAGUETTE SLICES, CRACKERS AND RAW VEGETABLE PIECES OR USE AS A SANDWICH SPREAD. Not sure of how many servings this makes.*

STRAWBERRY FANTASY

6 oz box strawberry gelatin
1 pint strawberries, quartered
2 cups frozen whipped topping, thawed
1 kiwifruit, peeled, halved and sliced
1 tbs honey

Tilt two 1 cup parfait glasses in a 9X5X3" loaf pan by resting the tops of glasses on pan's rim and the bottom on the opposite side. Repeat with 2 more glasses and a second loaf pan. Use a strip of masking tape running from one end to the other to hold glasses in place while filling and chilling.

In bowl, combine gelatin and 2 cups boiling water, dissolve according to package directions. Divide mixture between 3 bowls. In first bowl, stir in 3/4 cup ice cold water, pour 1/2 cup mixture into each glass. Refrigerate 30 min.

In blender, puree 1 1/2 cups strawberries 2 min. stir into second bowl of gelatin. Pour 1/2 cup puree mixture into each glass. Chill 20 min. or until set. Beat remaining gelatin 1 min. or until fluffy. Fold in 1 1/2 cups whipped topping.

Stand glasses upright and top with whipped mixture. Refrigerate 1 hour or until set. In bowl, combine remaining strawberries, kiwifruit and honey. Place remaining whipped topping in piping bag. PIPE 2 TBS WHIPPED TOPPING ON EACH PARFAIT. TOP WITH FRUIT. Makes 4 servings.*

PLUM RASPBERRY GRANITA

1 cup sugar
2 containers 6 oz each raspberries
3 medium plums, peeled, pitted and chopped
2 tbs black currant liqueur
1 lemon, zested and juiced

In heavy saucepan, bring sugar and 1 cup water to a boil. Reduce heat, simmer 2 min. DO NOT STIR. Remove from heat, chill 2 hours. In blender, pulse raspberries 1 min. or until smooth. Pour through a sieve, pressing to extract liquid, discard seeds. In blender, puree plums 1 min. or until smooth.

In 9 X 5" loaf pan, combine sugar water, raspberry and plum purees, liqueur and 1 tsp lemon juice. Cover with plastic wrap, freeze 20 min. Stir mixture. Freeze 30 min. stir. Freeze 30 min. more, stir. Freeze 1 hour before serving. Divide mixture among bowls. GARNISH WITH FRUIT, if desired. Makes 10 servings.*

TURKEY MONTE CRISTOS

1 pound small red skinned potatoes, cut into 1/2 inch pieces
1 small red onion, thinly sliced
1 tbs olive oil
1/4 tsp salt
1/8 tsp pepper
8 slices sourdough sandwich bread
8 tsp honey Dijon mustard
1/2 pound sliced smoked turkey
1/3 pound sliced Muenster cheese
12 leaves of basil or arugula
3 eggs
1 tbs milk
1/8 tsp cayenne pepper
1/8 tsp nutmeg
2 tbs butter

Heat oven to 450 degrees. Place potatoes and onions on baking sheet and toss with oil. Season with the salt and pepper. Bake 20 min. or until tender.

Place 4 slices of bread on a work surface and spread each with 2 tsp mustard. Divide the turkey and cheese over each bread slice. Top each with 3 pieces of basil and the remaining bread slices.

In a shallow dish, beat eggs, milk, cayenne and nutmeg. Heat a skillet. Add 1 tbs butter, when foamy, dip 2 of the sandwiches in the egg mixture and add to the skillet. Cook 4 min. per side or until nicely browned.

Remove sandwiches from skillet, keep warm. Reduce heat, repeat with remaining butter and sandwiches. SERVE THE SANDWICHES IMMEDIATELY WITH THE ROASTED POTATOES ON THE SIDE. Makes 4 servings.*

CRANBERRY SWIRL ANGEL FOOD

1 box angel food cake mix
1/2 cup chopped cranberries
1 orange, zested and juiced
2 tbs confectioners sugar
13 oz jar chocolate hazelnut spread
8 oz container frozen whipped topping, thawed
1 pint raspberries

Heat oven to 350 degrees. Prepare cake mix according to package directions, reducing water to 1 cup, add cranberries, 1/4 cup orange juice and 1 tbs orange zest to batter. Transfer to parchment paper lined jelly roll pan. Bake18 min. Invert cake onto confectioners sugar dusted tea towel. Starting at short end, roll cake jelly roll style.

Cool 5 min. on wire rack. In microwave bowl, microwave 1 cup chocolate hazelnut spread 20 seconds. Unroll cake. Spread with melted chocolate spread, leaving 1 inch border. Cut cake into three 3 1/2 X 16" strips. Starting at short end, roll first strip jelly roll style. Place on platter. Attach second strip to end, roll. Repeat with third strip.

Using back of spoon, frost cake by swirling 2 cups whipped topping onto outer surface of roll, coating completely. In microwave bowl, heat remaining chocolate spread 10 seconds, spoon onto center of cake. Place remaining whipped topping in piping bag fitted with star tip. Pipe border around cake. GARNISH WITH FRUIT, MINT AND CHOCOLATE CURLS if desired. Makes 10 servings.*

GREASY DIRT ON MINIBLINDS

Put on a pair of old cotton gardening gloves. Dip them into a mixture of household cleaner and warm water. Then run your fingers along each slat, top and bottom. Rinse.

SOAP SCUM ON SHOWER DOORS

Wipe with a solution of white vinegar and warm water, or spray with laundry prewash. If scum is heavy, scour with a nylon scrubbing pad. Rinse.

DIRTY PATIO DOOR TRACKS

Wrap a terrycloth rag around a screwdriver, spray with all purpose cleaner and make several passes along the track.

GRIMY PORTABLE FAN

Vacuum dust off grille with brush attachment. Use a hair dryer on cool setting to blow dust off blades. If the grille comes off, wipe blades with a household cleaner and damp cloth. Dry.

DUSTY DRAPES OR CURTAINS

21. Creamy Chocolate Dessert

Creamy Chocolate Dessert

Crust:
1 1/4 cups all-purpose flour
1/4 cup confectioners' sugar
6 Tablespoons chilled butter, cut into small pieces
1/4 cup finely chopped pecans, toasted
Filling:
8 ounces cream cheese, softened
1 cup confectioners' sugar
3 cups stabilized whipped cream, divided
3 cups milk
2 (3.9 ounce) packages instant chocolate pudding

Preheat oven to 325 degrees F. In a food processor, add
flour and sugar and pulse until combined. Add butter and
pulse mixture just until it resembles coarse meal. Stir in
pecans. Scoop the mixture into a 9x13-inch baking pan
coated with nonstick spray. Place into the oven and bake
until lightly browned, about 18 to 22 minutes. Remove
and place pan on a wire rack to cool completely. In a large
mixing bowl, add cream cheese and sugar and beat until
fluffy. Add 1 1/2 cups of the whipped cream and fold just
until combined. Scoop mixture onto the crust and spread
smooth. Cover loosely and place in the refrigerator to
chill for about 1 hour. In a large bowl, add milk and
pudding mix and beat until it begins to thicken, about 2
minutes. Cover and place into the refrigerator until set,
about 1 hour. Drop dollops of the pudding over the top
of the cream cheese layer and use an off-set spatula to
spread it smooth. Spread remaining whipped cream
over the pudding layer. Cover and place into the
refrigerator to chill for at least 30 minutes before
serving. Dust with natural cocoa powder before serving,
if desired.

1/4 cup butter
10 red-skinned potatoes, about 2 pounds, cut in half
1 large onion, cut into 8 pieces and separated
1 large garlic clove, finely chopped
salt and freshly ground black pepper

Preheat oven to 350 degrees F. In a 9x12x2-inch
casserole dish, melt butter in the oven, remove and
add potatoes, onion and garlic and toss to coat with
butter. Season with salt and pepper. Bake until
crispy, about 1 1/2 hours. Makes 4 servings.

Zucchini Parmesan

4 pounds zucchini, cut lengthwise into 1/4-inch-thick
slices
1/2 cup plus 2 Tablespoons olive oil, or more if needed
2 cups tomato puree
1/4 cup finely chopped onion
1/4 cup water
8 large fresh basil leaves, finely chopped
salt and freshly ground black pepper
1/4 cup (less than 1 ounce) freshly grated Parmesan
cheese
1/2 pound fresh mozzarella cheese, sliced

Preheat oven to 425 degrees F. Coat a 9x13x2-inch baking
casserole with some olive oil. Arrange zucchini slices on a
paper towel lined baking sheet or a platter and leave
exposed to the air for 30 minutes. Pat dry with paper
towels. In a large skillet, heat 1/2 cup of olive oil over
high heat. Working in batches, fry zucchini slices until
golden on both sides, turning with a fork, 4 to 5 minutes.
Remove from skillet with a fork and set aside on a paper
towel lined baking sheet or platter to drain. Meanwhile,
in a saucepan combine tomato puree with onion, water
and basil. Season with salt and pepper. Bring to a
simmer over medium heat. Reduce heat to medium-low
and continue cooking, stirring occasionally, until a little
denser, about 5 minutes. Arrange zucchini on bottom
of prepared casserole, with all slices facing the same
direction and overlapping if necessary. Sprinkle with
Parmesan cheese, salt and pepper. Spoon half of the
tomato sauce over the zucchini, lay mozzarella slices
over the tomato sauce, then spoon remaining tomato
sauce over mozzarella. (At this point casserole may be
refrigerated to bake later.) Bake until bubbling furiously,
about 30 minutes. Remove from oven and let rest 10
minutes before serving. Makes 6 servings.

Simple Spinach Casserole

2 Tablespoons unsalted butter
2 pounds fresh spinach, heavy stems removed,
washed well
1 1/2 cups shredded Gruyere cheese
1/2 cup heavy cream
salt and freshly ground black pepper
pinch of nutmeg

Preheat oven to 350 degrees F. Lightly butter a small
oval baking casserole. In a large saucepan, melt
butter over medium-high heat. Spin spinach leaves in
a salad spinner or swing in a kitchen towel, then add
to saucepan. Cook, stirring occasionally, until slightly
wilted, 3 to 4 minutes. Remove spinach and set aside.
In a bowl, mix cheese with the cream. Add spinach
and season with salt, pepper and nutmeg. Transfer
to prepared casserole and bake until slightly golden
brown on top and bubbly, about 40 minutes. Makes
4 servings.

Country Summer Skillet Supper

1 pound ground beef
1 medium onion, chopped
1/8 tsp. garlic powder or 1 clove garlic, minced
10 3/4 ounce can Golden Mushroom Soup
1 can condensed beef broth
1/2 teaspoon dried thyme leaves, crushed
1 14 1/2 ounce can diced tomatoes
1 small sliced zucchini
1 1/2 cups uncooked corkscrew pasta

Cook beef, onion and garlic in skillet until browned. Pour off fat.
Add soup, broth, thyme, tomatoes and zucchini. Heat to a boil. Stir
in pasta. Cook over low heat 15 min. or until done.

Serves 4.

Gingerbread Cookies

1 cup vegetable shortening
1 cup sugar
1 large egg
1 cup molasses
2 Tablespoons cider vinegar
4 to 5 cups sifted all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Using an electric mixer, cream shortening and sugar
together until light and fluffy. Add egg, molasses and
vinegar and beat on high speed to blend thoroughly.
Sift together 4 cups of the flour and baking soda, salt,
ginger, cinnamon and cloves. Add dry ingredients to
sugar mixture and mix to make a firm, manageable
dough, adding more flour if needed. Wrap dough in
plastic and refrigerate for 3 hours or until firm. Preheat
oven to 375 degrees F. Lightly grease 1 or 2 baking
sheets. Spray a rolling pin with cooking spray and
lightly flour a work surface. Roll dough to 1/8-inch
thickness and cut into desired shapes with a knife or
cookie cutters. (You can re-roll the scraps to make a
few more cookies.) Place cookies 1-inch apart on
prepared baking sheet and bake for 5 to 6 minutes.
Cool on baking sheet for 2 minutes, then remove to a
wire rack to cool completely. Sprinkle with
confectioners' sugar, ice or just eat. Makes 5 dozen.

Southern Coleslaw

1 firm head green cabbage, about 2 pounds
1 large carrot, peeled
1/2 small sweet onion, peeled and chopped fine
1/4 cup diced salad pickles
1/2 cup mayonnaise
1/2 teaspoon salt
pinch of black pepper

Remove and discard any bruised or undesirable outside
leaves from the cabbage. Quarter the cabbage and grate
it into a large bowl using the coarse side of a hand grater
or the shredding blade of a food processor. Grate the
carrot and add to the cabbage, tossing together to
combine. Add onion, pickles, mayonnaise, salt and
pepper. stir together until thoroughly mixed. Chill for
at least 1 hour before serving. Makes 6 servings.

Preheat oven to 350. Spray 9x13x2" baking dish with spray. Cover
bottom of dish with 1 package crescent rolls. Layer salami, ham and
pepperoni. Next layer Provolone cheese and Swiss cheese. Spread 1/2
of the beaten eggs over the cheese. Top with second package of
crescent rolls. Brush with remaining beaten eggs and sprinkle with
Parmesan cheese.

Bake uncovered for 25 minutes. Cover with foil, and bake for another
10 minutes.

Grape Salad

1 (8-ounce) container sour cream
3 pounds seedless grapes, whole, stemmed
1/2 cup brown sugar
1/2 cup chopped pecans

Mix first 3 ingredients in mixer until smooth. Fold in sour cream and
add grapes. Spoon mixture into 9x13-inch pan. Mix brown sugar and
pecans. Sprinkle over grape mixture. Refrigerate a few hours before
serving.

Cranberry Date Bars
13x9x2-inch baking pan

These are wonderful. They have a nice tangy yet sweet flavor and they are
not hard to make. I got the recipe from the Best of Country Cooking 2000.

Ingredients:

1 package (12 ounces) fresh or frozen cranberries
1 package (8 ounces) chopped dates
1 teaspoon vanilla
2 cups all-purpose flour
2 cups quick-cooking oats
1 1/2 cups packed brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup butter or margarine, melted
ORANGE GLAZE:
2 cups powdered sugar
2 tablespoon orange juice
1/2 teaspoon vanilla

In a saucepan, combine cranberries and dates. Cover and cook over low heat
for 15 minutes or until berries pop, stirring often. Remove from the heat
and stir in vanilla; set aside. In a bowl, combine flour, oats, sugar,
baking soda and salt. Stir in butter until crumbly. Press half into an
ungreased 13x9x2-inch baking pan. Bake at 350° for 8 minutes. Spoon
cranberry mixture over the crust; spread gently. Sprinkle with remaining
crumb mixture; pat down gently. Bake at 350° for 20 to 25 minutes or until
golden brown. Cool. Combine glaze ingredients; drizzle over bars. If
glaze is too thick, add 1 more tablespoon orange juice or till desired
consistency.

Brownies Obama

1/2 cup butter, plus more for pan
1 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 ounces dark chocolate, coarsely chopped
1 ounce semisweet chocolate, coarsely chopped
1 cup packed dark brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
confectioners' sugar for dusting

Preheat oven to 350F degrees. Butter 8-inch square pan and line
bottom with parchment paper. Leave an overhang on two sides. Butter
paper and set pan aside.

In medium bowl, whisk together flour, baking powder, and salt. Set
aside.

Place butter and chocolates in large heatproof bowl set over a
saucepan of simmering water. Heat until smooth, 2 to 3 minutes.
Stir occasionally. Remove from heat and stir in sugars, eggs,
vanilla, and flour mixture. Transfer batter to prepared pan and
smooth top.

Bake until toothpick inserted in center comes out clean,
approximately 30 to 35 minutes. Set pan on a wire rack and let cool
completely. Using paper overhang, life brownies onto a cutting board
and cut into squares. Dust with confectioners' sugar after cutting
and serve.

I use boric acid mixed with honey to eliminate ants in my pantry. I can find
it at Walgreen's also Wal-mart. Like you, I buy big bags of rice (20#)
because it is cheaper that way - we go through that in a month, though.
If you can't find boric acid, maybe invest in a plastic sealed container for
grains. That would also protect from damp.

HI,

I have found boric acid readily available in drugs store in my area however I don't use that much and not for food preservation.

What I have done for all of my staples like rice, flour, pasta, etc is to buy one gallon plastic storage containers at Smart & Final. They are inexpensive at only a couple of dollars per container. They also come in two smaller sizes that I also use for other items. I have also bought standardized size plastic and glass jars for all of my spices. I find that having standard sizes really make things easier to store. I have built a spice rack that is specifically sized for my bottles.

I use a Bay Leaf or 2 in my flour containers to keep away pest, but not sure if it works for rice, because we don't use very much of it. Couldn't hurt to give it a try, though. My mama taught me this years ago and it has always worked for me.

Boric acid has been found to be toxic for human consumption.
I put all grains, flours, beans etc. in the freezer for several days to
kill all insect eggs. Then remove, bring to room temp and dry and seal
in airtight bugproof containers. I use recycled tubs, jars, coffee tins etc.

6 dozen cookies

These are great cookies. The citrus peel adds a distinct but pleasant
flavor. I got this recipe from Taste of Home 2000.

1/2 cup butter (no substitutes) , softened
1/2 cup shortening
1 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 1/2 cup all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
2 teaspoon cream of tartar
2 teaspoon ground nutmeg
2 teaspoon grated orange peel
1 teaspoon grated lemon peel
1/2 teaspoon salt
Additional sugar

In a mixing bowl, cream butter, shortening and sugars. Add the egg and
extracts; mix well. Combine the next eight ingredients; gradually add to
the creamed mixture. Shape into 1-inch balls; roll in sugar. Place 2
inches apart on ungreased baking sheets. Bake at 350° for 10 to 15 minutes
or until lightly browned.

Banana Poppy Seed Muffins

2 medium bananas, peeled
1 egg
3/4 cup sugar
1/4 cup vegetable oil
2 teaspoons grated orange peel
2 cups all-purpose flour
1 1/2 tablespoons poppy seeds
2 teaspoons baking powder
1/2 teaspoon salt

Puree bananas in blender (1 cup). In medium bowl, mix bananas, egg,
sugar, oil and orange peel until well blended. In large bowl, combine
flour, poppy seeds, baking powder and salt. Stir banana mixture into
flour mixture until evenly moistened. Spoon batter into greased 2 1/2-
inch muffin cups. Bake in 375 oven 20 minutes or until wooden pick
inserted in center comes out clean. Remove from pan; cool on wire
rack. Dip warm tops in sugar.

Makes 12 muffins

Serves 6.

1 pound ground cooked ham
1/4 pound lean ground por
k 1/3 cup milk
2 eggs
1 slice bread, cubed
1/4 pound ground veal OR ground beef
3 tablespoons chili sauce
2 tablespoons packed brown sugar

Cooking Directions
Use fork to beat together milk and eggs in large bowl.
Stir in bread cubes. Let stand for 15 minutes.

Heat oven to 350 degrees F.
Grease 8x4-inch loaf pan.

Add ground ham, ground pork and ground veal or beef to milk mixture. Stir
until well mixed, using your hands to mix as necessary.

Pat meat mixture evenly into greased loaf pan.
Bake 1 hour.

Stir together chili sauce and brown sugar in small bowl; spoon evenly over
ham loaf.

Bake until internal temperature is 160 degrees F., about 10 minutes more.
Let stand for 10 minutes.

Carefully slice and serve.

Serving Suggestions
A flavorful standard for leftover ham and a tasty difference from regular
meatloaf. Serve with mashed potatoes and buttered peas. Also great the next
day as sandwich.

1 dash Cayenne pepper

6 Bacon slices -- *

4 each Whole Grain Bread slices
Tomato slices

Alfalfa or Radish Sprouts
1 each Avocado, peeled & sliced

Directions:
*Note: Bacon slices should be cooked until crisp and then crumbled.

Beat the cheddar, lime juice, Worcestershire sauce, paprika, garlic powder,
and cayenne pepper until mixed thoroughly.

Sprinkle the crumbled bacon on the bread slices.

Spread 2 Tbls of the cheese mixture on each slice of bread.

Top one slice with tomato slices.

Grill open faced under broiler, or cook in large saute pan sprayed with oil
pan spray.

When browned, remove from heat, add some sprouts and avocado slices.

Place halves together to make sandwich, slice and serve

Angel Food Cake with Strawberry Ice Cream

1 loaf Angel Food Cake
1 1/2 cups strawberry ice cream, softened
1 1/4 cups cool whip
fresh strawberries, optional

Cut a 1/2 inch slice off the top of Angel Food Cake; set aside. Hollow
out the center of the bottom half, leaving a thick shell. Spoon
softened ice cream into cake shell; top with reserved cake top. Cover
and freeze for 4 hours or until firm.

Place cake on serving dish; spread whip topping evenly over cake top
and sides. Garnish with fresh strawberries, if desired.

Monterey Wraps

1 cup Ranch dressing
1 package (8 ounces) cream cheese, softened
10 ounces sliced turkey breast
10 ounces Monterey Jack cheese slices
2 large avocados, peeled and thinly sliced (optional)
2 medium tomatoes, thinly sliced
Shredded lettuce
4 (12-inch) flour tortillas, warmed

Beat together dressing and cream cheese. Evenly layer half the turkey,
Monterey Jack cheese, dressing mixture, avocados, tomatoes and lettuce
among tortillas, leaving a 1-inch border around edges. Repeat layering
with remaining ingredients. Fold right and left edges of tortillas into
centers over the filling. Fold the bottom edge toward the center and
roll firmly until completely wrapped. Place seam side down and cut in
half diagonally.

Creamy Parmesan Broccoli

1 (14-oz.) pkg.Frozen Broccoli Florets
2 tablespoons olive oil
3/4 cup grated Parmesan cheese
1/2 cup chopped green onions
1/2 cup sour cream
1/4 cup mayonnaise or salad dressing
2 tablespoons milk
1/8 teaspoon pepper
1/4 cup pine nuts or chopped walnuts, toasted*

1. Heat oven to 350°F. Cook broccoli as directed on package. Drain.
Place in ungreased 12x8-inch (2-quart) glass baking dish or 2-quart
casserole. Drizzle with oil. Sprinkle with 1/4 cup of the cheese;
toss to coat.

2. In medium bowl, combine remaining 1/2 cup cheese and all remaining
ingredients except pine nuts; mix well. Spoon over broccoli.

3. Bake at 350°F. for 18 to 20 minutes or until sauce begins to
bubble and brown. Sprinkle with pine nuts.

Christmas Cake

3/4 cup shortening
2 1/4 cups sugar
6 egg yolks
4 1/2 cups sifted cake flour
6 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 1/2 cups chopped dates
1 1/2 cups chopped walnuts
2 egg whites
1/4 teaspoon cream of tartar

Preheat oven to 325 degrees F. Grease an
8 1/4x4 1/4-inch tube pan OR 2 9x4x2 3/4-inch loaf
pans. Cream shortening, then add sugar gradually and
cream thoroughly. Add egg yolks, one at a time,
beating well after each addition. Sift flour with baking
powder and salt and add alternately with milk. Add
flavourings. Mix in dates and nuts thoroughly. Beat
egg whites until foamy, add cream of tartar and
continue beating until stiff peaks form. Fold into batter.
Pour batter into prepared pan(s) and bake for 1 1/4
hours. Cool in pan for 10 minutes on a wire rack, then
turn out to cool completely.

Cheesy Chicken Chowder

3 cups chicken broth
2 cups peeled and diced potatoes
1 cup diced carrots
1 cup diced celery
1/2 cup diced onion
1 1/2 teaspoons salt
1/4 teaspoon pepper (or less)
1/4 cup butter
1/3 cup flour (more if you prefer a thicker chowder)
2 cups milk
2 cups (8 ounces) shredded sharp Cheddar cheese
2 cups diced cooked chicken

In a 4 quart saucepan, bring chicken broth to a boil. Reduce
heat, then add potatoes, carrots, celery, onions, salt and
pepper. Cover and simmer for 15 minutes or until vegetables
are tender. Meanwhile, melt butter in a medium saucepan,
then add flour and mix well. Gradually stir in milk. Cook
over low heat until slightly thickened. Stir in cheese and
cook until melted. Add to broth along with chicken. Cover
and stir over low heat until heated through. Skim excess
butter off top or chill until butter solidifies. Makes 4
servings.

Almond Cherry Biscotti

2 cups all-purpose flour
1 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cold butter (NO substitutes)
2 eggs
1 Tablespoon milk
1/2 teaspoon vanilla extract
1 cup coarsely chopped blanched almonds
1 cup halved candied cherries

In a bowl, combine flour, sugar, baking powder and salt.
Cut in butter until mixture resembles coarse crumbs.
In another bowl, beat eggs, milk and vanilla until
blended. Stir into dry ingredients until blended. Stir
in almonds and cherries (dough will be crumbly).
Divide dough in half and shape each half into a ball.
On an ungreased baking sheet, roll each ball into a
10x2 1/2-inch rectangle. Bake at 350 degrees F. for
30 to 35 minutes or until golden brown. Carefully
remove to wire racks and cool for 20 minutes. Transfer
to a cutting board and cut diagonally with a sharp
knife into 3/4-inch slices. Place cut side down on
ungreased baking sheets. Bake for 15 minutes or until
firm. Remove to wire racks to cool. Store in an airtight
container. Makes 2 dozen.

1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped pecans
additional confectioners' sugar

Preheat oven to 350 degrees F. In a mixing bowl, cream
butter, sugar and vanilla, mixing well. Combine flour
and salt and add to creamed mixture. Stir in pecans.
Cover and chill 1 hour or until firm. Roll into 1-inch
balls and place on ungreased baking sheets. Bake for
10 to 12 minutes. Roll in confectioners' sugar while
warm. Cool, then roll in sugar again. Makes about 4
dozen.

Cranberry Banana Nut Bread

2/3 cup vegetable shortening
1 1/3 cups sugar
3 eggs
2 cups mashed bananas, about 4 large
3 1/2 cups self-rising flour
1/4 teaspoon baking soda
1 cup chopped walnuts
16 ounce can whole berry sauce

Heat oven to 350 degrees F. Grease bottoms of two
8x4-inch loaf pans. In large bowl, cream shortening and
sugar together until light and fluffy. Add eggs 1 at a
time, beating well after each addition. Add bananas,
flour, soda, walnuts and cranberry sauce and stir gently
to blend. Pour batter into prepared pan. Bake for 1
hour or until toothpick inserted in center comes out
clean. Cool in pans 10 minutes. Remove from pans and
cool on wire rack. For easier slicing, wrap loaves and
store overnight in a cool place.

Boil carrots in salted water until crisp and tender. Drain.
In saucepan, mix sugar, lemon juice and butter and heat

Parmesan Cheese Bites

1 cup all-purpose flour
2/3 cup grated Parmesan cheese
1/4 teaspoon ground red pepper
1/2 cup butter, cut up
2 Tablespoons milk

Stir together first 3 ingredients in a medium bowl. Cut
in butter with a pastry blender until crumbly. (Mixture
will look very dry.) Gently press mixture together with
hands, working until blended and smooth, about 2 to 3
minutes. Shape dough into 1 (4-inch long) logs. Wrap
in plastic wrap and place in an airtight container. Chill
8 hours or freeze up to 3 months. (Thaw overnight in
refrigerator before using, if frozen.) Cut log into
1/4-inch thick slices and place on a lightly greased
baking sheet. Brush with milk Bake at 350 degrees F.
for 12 to 15 minutes or until lightly browned. Can be
cooked and frozen up to 1 month, if desired. Makes
32 cheese bites.

American Steak Fries with Coriander Seeds

2 pounds unpeeled russet potatoes, scrubbed, cut lengthwise into 1/2-
inch thick sticks
2 tablespoons olive oil
1 1/2 teaspoons coriander seeds, cracked
1 teaspoon dried thyme
kosher salt

Preheat oven to 450F degrees. Spray large rimmed baking sheet with
nonstick spray. Toss potatoes with olive oil, coriander seeds and
thyme in large bowl. Transfer to prepared sheet and spread in single
layer. Sprinkle with salt and pepper.

Place in top third of oven and bake until golden, occasionally turning
with spatula (about 40 minutes). Season to taste with kosher salt and
serve.

18. Anchovy Grilled Salmon Steaks

Yield: 4 Servings
4 salmon steaks
1 parsley sprigs
Lemon wedges anchovy butter
6 anchovy fillets
2 T milk
6 T butter
1 dr tabasco sauce
1 pepper

Pre-heat the grill to high heat. Oil the grill rack and place each
steak to ensure an even heat. Place a small knob of Anchovy Butter
(divide a quarter of the mixture in four) on each steak. Grill for 4
minutes. Turn the steaks with a fish slice and place another quarter
of the butter among the steaks. Grill on the second side 4 minutes.
Reduce the heat and allow to cook for a further 3 minutes, less if the
steaks are thin. Serve with a neatly arranged pat of anchovy butter on
top of each steak. Garnish with parsley sprigs and lemon wedges.
Anchovy Butter: Soak all the anchovy fillets in milk. Mash in a bowl
with a wooden spoon until creamy. Cream all ingredients together and
chill.

ROASTED SQUASH SOUP

Peel and seed 1 large butternut squash, cut into 8 wedges. Drizzle with 2 tbs oil, roast at 350 degrees for 1 hour. Heat 1 tbs oil in a pot, add 1 chopped onion and saute 5 min.

Add roasted squash, 4 cloves crushed garlic, 1 peeled cored and chopped apple, 5 cups chicken broth, 1 cup apple cider and 1 tsp salt. Simmer 30 min. or until apple is very soft. Puree in food processor. Garnish with sour cream. MAKES 8 SERVINGS.*

Almond Chicken

1 lb skinned chicken breast.
1/3 Slivered almonds
5 slices fresh ginger root
3 green onions, chopped to about 1" lengths
1 green pepper, chopped as above
1/2cup diced bamboo shoots
1 cup vegtable oil

~~Marinade~~
1/4 tsp salt
1/8 tsp white pepper
1 tsp cornstarch
1 Tbsp soy sauce
1 egg white

~~Seasoning sauce~~
1 Tbsp rice vinegar
2 Tbsp soy sauce
1 Tbsp dry sherry
1/2 tsp salt
1 tsp sugar
1/2 tsp cornstarch

Cut chicken into 1" cubes. Combine marinade ingredients, add
chicken and mix well. Let stand 1/2 hour.
Heat oil in wok, add chicken and stir-fry until browned. Remove
chicken and drain well. Stir-fry ginger, onion, pepper and bamboo
shoots for about 1 minute until vegtables are crisp-tender. Combine
ingrediants for seasoning sauce in a small bowl, mix well and add to
wok. bring to boil. Add chicken to boiling sauce. Stir-fry chicken until
coated with sauce. Add almonds, mix well and serve hot. Serves 4

CINNAMON NUT BISCOTTI

1/2 cup unsalted butter, softened
3/4 cup sugar
2 eggs
1 tsp vanilla
1/3 cup flavored ground coffee
2 1/2 cups flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp salt
1 cup chopped hazelnuts
3/4 cup cinnamon flavored chips or white chocolate chips

Line a baking sheet with foil. Beat butter and sugar in a bowl until light and fluffy. Beat in eggs. Stir in vanilla. Place coffee in a food processor and grind 2 min. Add flour, baking powder, cinnamon and salt. Pulse to blend. Add to butter mixture, stir until smooth. Stir in hazelnuts and chips, mix well.

Divide dough in half, place half on baking sheet. Pat into a 12X2 inch log, flattening top slightly. Repeat with second half, placing on baking sheet. Bake at 350 degrees for 30 min. or until browned around edges.

Remove from oven. Cool logs 10 min. Place on cutting board. Cut logs diagonally into 1/2 inch thick slices for a total of 32. Place slices, cut side down, on baking sheet. Bake 18 min. Cool. MAKES 32 COOKIES.*

1 bay leaf
2 tsp lemon juice
2 tbs cornstarch

Sprinkle chicken with salt and pepper. Heat oil in a skillet, then add chicken. Cook chicken 5 min. or until lightly browned on all sides, remove from pan and set aside.

Add mushrooms to pan and cook 3 min. or until golden. Cut carrots on the diagonal and add along with onions. Cook 5 min. Add garlic, thyme and rosemary, cook 1 min. or until fragrant. Add flour and cook 3 min.

Add wine and cook 3 min. or until reduced by half. Whisk in broth and bay leaf and bring to a simmer. Return chicken to pan. Bring back to a simmer and cover. Place skillet in oven and cook at 350 degrees for 23 min. or until 170 degrees on thermometer.

Remove pan from oven. Remove chicken from pan and set aside. Stir lemon juice into the sauce. Blend cornstarch and 2 tbs water in a bowl, heat sauce and whisk in cornstarch mixture. Boil 3 min. or until thickened. TO SERVE---Divide sauce and chicken among plates. MAKES 4 SERVINGS.*

HAM AND POTATO SALAD

1/2 pound baby red potatoes
1 pound cooked ham, sliced into strips
1/2 pound green and/or yellow beans, trimmed and blanched
1/2 cup Dijon mustard dressing
1 head lettuce, separated into leaves

Remove band of skin from middle of each potato. In saucepot, bring 2 quarts salted water and potatoes to a boil. Cook 15 min. more or until potatoes are tender, drain and cool slightly. In bowl, combine potatoes, ham, beans and dressing. Arrange lettuce leaves on platter. Top with ham potato mixture. MAKES 6 SERVINGS.*

SEARED SCALLOP SALAD

2 red and/or yellow bell peppers, seeded and sliced
2 tbs basil flavored olive oil
1 pound sea scallops, trimmed
1 lemon, zested and juiced
1 head endive, separated into leaves

In skillet, cook peppers in oil 3 min. or until softened. Remove from skillet, set aside. Add scallops and 1 tbs lemon juice to skillet, cook 3 min. or until scallops are opaque, turning once.

Return peppers to pan and add 1 tsp lemon zest, cook 2 min. or until heated through. Arrange endive on platter. Top with peppers and scallops. Sprinkle with 1 tsp lemon zest. MAKE 6 SERVINGS.*

SPICY OVEN FRIED CHICKEN

3/4 cup buttermilk ( I used whole milk)
1 tbs each hot pepper sauce and Dijon mustard (I used 1 tsp hot pepper sauce)
2 cloves garlic, minced
1/2 tsp pepper
2 tsp salt
4 boneless skinless chicken breasts
1 cup plain bread crumbs ( I used seasoned bread crumbs)
1/4 cup grated Parmesan cheese
2 tbs flour
2 tsp dried thyme
1/2 tsp each paprika and cayenne pepper ( I used 1/4 tsp cayenne)
3 tbs olive oil (I used vegetable oil)

In a bowl, whisk first 5 ingredients and 1 tsp salt. Add chicken and turn to coat. Cover and refrigerate 4 hours. In a bowl, combine bread crumbs and next 5 ingredients, remaining salt and 2 tbs oil, mix well. Remove chicken from marinade, place in bread crumb mixture. Turn to coat. Place chicken on a baking rack and let sit for 20 min.

Put remaining oil in a rimmed baking sheet and place in 400 degree oven. After 5 min. place chicken on heated baking sheet. Bake 30 min. or until crispy, golden and baked through. Serve with roasted potatoes and green beans, if desired. I served with a baked potato and green salad. MAKES 4 SERVINGS.*

Fisherman's Tomatoes and Salmon

1 14-3/4 oz. (or 2 cans, 7-1/2 oz each) Alaska salmon
4 large tomatoes
2 Tbs olive oil
1 Tbs white wine vinegar
2 tsp Dijon-style mustard
1 Tbs finely chopped parsley or watercress
1 cup cooked, chilled, favorite rice
1 cup cooked, chilled, corn kernels

Drain and flake salmon*. Cut tomatoes in half across the
middle and remove the core and seeds. Whisk together the
olive oil, mustard, and vinegar until well blended. Stir
in parsley or watercress. Toss together salmon, rice and
corn in a mixing bowl. Toss with dressing to coat. Place
tomato halves on a serving plate and fill with salmon
mixture. Makes 4 servings.

*The skin and tiny, soft bones are completely edible and
an excellent source of calcium and omega-3 fatty acids.
Simply blend skin and bones with salmon and other
ingredients.

GRILLED LOBSTER AND SUMMER VEGETABLES WITH SPICY HERB BUTTER

Serves 4

SPICY HERB BUTTER:

1 pound unsalted butter, at room temperature

3 garlic cloves, coarsely chopped

1 red or green jalapeno chili, stemmed, seeded, deveined, and coarsely
chopped

1/4 cup coarsely chopped Italian parsley

1 lemon, juiced

3 tablespoons chopped chives

Salt

Freshly ground black pepper

LOBSTER AND SUMMER VEGETABLES

2 1-1/4 pound lobsters

1 yellow summer squash, cut lengthwise into slices 1/4 inch thick

1 zucchini, cut lengthwise into slices 1/4 inch thick

1 red bell pepper, stemmed, seeded, deveined, and cut into 4 pieces

1 lemon, cut into 6 wedges

Extra-virgin olive oil, for drizzling

Salt

Freshly ground black pepper

Preheat the grill.

Meanwhile, prepare the Spicy Herb Butter. In a food processor fitted with
the metal blade, combine the butter, garlic, jalapeno, parsley, lemon juice,
and chives. Season to taste with salt and pepper and process until blended.
Transfer to a small container and remove about 4 tablespoons of the mixture
to another container, setting both aside.

Bring a large pot of water to a rapid boil. Place the lobsters in the
boiling water and cook them just until their shells turn red, or enough to
cook the meat completely, about 3 minutes. Remove the lobsters and leave
them at room temperature until they are just cool enough to handle.

Turn the lobsters on their backs on a cutting board. With a large, sharp,
heavy knife, cut each lobster lengthwise in half. Pull out and discard the
sand sac near the head of each lobster. With the knife tip, remove the gray
intestinal vein.

Brush the meat and inside of the lobsters with some of the herbed butter
from the main container, using about 1 tablespoon per lobster half. Place
the lobsters on the grill cut side down and cook until the meat has grill
marks and starts to turn opaque and firm up, about 5 minutes.

While the lobsters are cooking, start grilling the vegetables. Drizzle the
squash, zucchini, pepper, and lemon wedges with olive oil, season with salt
and pepper, and place on the grill; then, brush them with some of the butter
from the main container. Grill until tender and browned, 3 to 4 minutes per
side.

Turn the lobsters shell side down and grill them 3 to 4 minutes longer,
brushing the meat with more butter from the main container.

Transfer the lobsters and vegetables to a large platter. Squeeze some of the
grilled lemon wedges over the lobster meat. Pass the platter along with the
4 tablespoons of reserved butter for guests to add to their servings if they
like.

Snickers and Peanut Butter Muffins

1 2/3 cups all-purpose flour
6 tablespoons granulated sugar
1 1/2 tablespoons baking powder
Pinch of salt
6 tablespoons chunky peanut butter
1/4 cup unsalted butter, melted
1 large egg, beaten
3/4 cup milk
3 1/2 full-size (2.07 ounce) Snickers bars, chopped

Preheat oven to 400 degrees F. Grease 12 standard-size muffin tin
cups or line with paper baking cups.

Stir together flour, sugar, baking powder and salt. Add peanut
butter and mix until mixture turns into coarse crumbs.

In separate bowl, combine butter, egg and milk. Gently stir wet
ingredients into dry ingredients, about 15 seconds. Lightly mix in
Snickers pieces, about 10 seconds. It's okay if small bits of
unmoistened flour remain. Do not overmix.

Evenly dollop batter into cups of prepared muffin tin. Bake 20 to 25
minutes, or until the tops are golden and just firm when lightly
touched. Set pan on a wire rack for 5 to 10 minutes, then remove
muffins and set on wire rack to cool.

Makes 12 muffins.

Bacon-Swiss Tossed Salad

1/2 cup mayonnaise
1 tablespoon granulated sugar
1/4 teaspoon salt
1/4 teaspoon pepper
6 cups mixed salad greens
1 medium red onion, sliced
1 (10 ounce) package baby frozen peas, thawed
8 ounces sliced Swiss cheese, julienne
1 pound bacon, cooked and crumbled

In a small bowl, combine mayonnaise, sugar, salt and pepper.

In a large salad bowl, layer a third of the greens and a third of the
mayonnaise mixture, onion, peas and cheese. Repeat the layers twice.
Cover and refrigerate for at least 2 hours.

Just before serving, add the bacon and toss.

Frozen Pistachio Dessert

45 Ritz crackers
3/4 cup melted butter
2 small boxes instant pistachio pudding mix
1 quart vanilla ice cream
1 1/3 cup milk
8 ounces Cool Whip
Chocolate chips

Crush crackers and pour melted butter over crackers in a 9 x 13-inch
pan. Bake 10 minutes at 350 degrees and let cool.

Mix pudding, milk and ice cream in large bowl and pour into crust.
Freeze. Spread cool whip over top and sprinkle with chocolate chips.
Keep frozen.

2 Tbsp oil
3 Tsbp chopped onion
1 cup BBQ sauce
1/2 cup water

Cut meat into serving size pieces. In skillet, in oil over med heat, brown
meat. Place in 9x134 pan. Stir remaining ingredients and pour over meat.
Cover with tin foil. Cook at 325 for 1 1/2 hours.

2 (3 oz) jars macadamia nuts
1 (20 oz) pkg of white almond bark
3/4 cup flaked coconut

Heat dry skillet and toast nuts until slightly golden. (Some brands of macadamia nuts are already toasted.) Set aside. In a double boiler, melt 12 squares of almond bark. As soon almond bark melts, pour nuts and coconut in with almond bark and stir well. Place wax paper on cookie sheet, pour candy on wax paper and spread out. Refrigerate 30 minutes to set. Break into pieces.

Twice Baked Potatoes

6 large baking potatoes
1 (16 oz) container sour cream
1/4 cup shredded cheddar cheese
3/4 cup butter
Salt and pepper, to taste
3 slices American cheese

Preheat oven to 350 degrees. Bake potatoes for 1 hour or until soft. Cut enough of the skin off the top of each potato to be able to scoop the potato out of the skin and into a mixing bowl. Add butter, sour cream, grated cheese and mix together well. Add salt and pepper to taste. Fill the skins with the mix and top with 1/2 slice America cheese. Bake for 20 to 25 minutes, just until heated through.

Bierock Casserole

1 1/2 to 2 lbs. ground chuck

2 cans crescent rolls

2 c. Cheddar cheese, shredded

1 onion, diced

1 sm. head of cabbage

1 can cream of mushroom soup

Brown meat and onion; drain. Add cabbage to meat and steam. Add soup to the
mixture, steam. Line 9x13 inch pan with 1 can of crescent rolls (lay flat).
Pinch seams. Top with mixture. Top with the Cheddar cheese and top with 2nd can
of crescent rolls. Pinch top together. Bake at 350 degrees for 25 to 30
minutes.

1 can strawberry pie filling
1 (20 oz) can cherry pie filling
1 (18 oz) pkg white cake mix
1 cup (2 sticks) butter, melted
3/4 cup pkg almonds, slivered

Spread pie fillings in greased 13x9-inch sprayed baking pan. Sprinkle cake mix over cherries. Drizzle melted butter over top and sprinkle almonds. Bake at 350 degrees for 55 minutes. Serve with whipped topping.

1 (15 oz) can cream-style corn
1 (11 oz) can whole niblet style corn
2 eggs
1 cup sour cream
1 (8.5 oz) pkg dry corn bread mix
1/2 cup butter, melted
1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Grease a 12x8-inch casserole dish. In a mixing bowl, combine cream corn, niblet corn, eggs, sour cream, Muffin mix, and butter. Pour into prepared casserole dish. Bake in a preheated oven for 30 minutes or until lightly brown. Remove from the oven and sprinkle cheese over the top. Return to the oven for 15 minutes or until the center is firm.

Banana Split Cake

From Kraft Foods

1-1/2 cups HONEY MAID Graham Cracker Crumbs

1 cup sugar, divided

1/3 cup butter, melted

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese,
softened

1 can (20 oz.) crushed pineapple, drained

6 medium bananas, divided

2 cups cold milk

2 pkg. (4-serving size each) JELL-O Vanilla Instant
Pudding

2 cups thawed COOL WHIP Whipped Topping, divided

1 cup PLANTERS Chopped Pecans

MIX crumbs, 1/4 cup of the sugar and the butter; press
firmly onto bottom of 13x9-inch pan. Freeze 10 min.

BEAT cream cheese and remaining 3/4 cup sugar with electric
mixer on medium speed until well blended. Spread carefully over crust; top with
pineapple. Slice 4 of the bananas; arrange over pineapple.

POUR milk
into medium bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until
well blended. Gently stir in 1 cup of the whipped topping; spread over banana
layer in pan. Top with remaining 1 cup whipped topping; sprinkle with pecans.
Refrigerate 5 hours. Slice remaining 2 bananas just before serving; arrange
over dessert. Store any leftover dessert in refrigerator.

Brownie Chip Cookies

1- 21.5 oz. pkgs. fudge brownie mix (Family size)
1/3 C. margarine, melted
2 eggs
6 oz. (1 Cup) semi sweet chocolate chips

Heat oven to 350F. Generously grease cookie sheet. In large bowl,
combine borwnie mix, margarine and eggs, beat 50 strokes by hand. Stir
in chocolate chips. Drop by rounded teaspoonfuls 2 inches apart on
greased sheet. Bake at 350F for 8-12 minutes. Cool 1 minute then remove
from sheet. Cookies will flatten when removed from oven.

Yields: 3 dozen

15x10x1-inch pan

An Excellent way to get rid of ripe bananas and it really is good. I cut
the frosting recipe in half as it was too rich with the full recipe. I also
added a few chocolate chips to the batter before baking. I got the recipe
from 1995 Taste of Home Annual Recipes and it was submitted by Karen Dryak,
Niobrara, Nebraska..

Ingredients:

1/2 cup butter or margarine, softened
2 cups sugar
3 eggs
1 1/2 cups mashed ripe bananas, (about 3 medium)
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
Pinch of salt
1/2 cup butter or margarine, softened
1 package (8 ounces) cream cheese, softened
4 cups confectioners' sugar
2 teaspoons vanilla

In a mixing bowl, cream butter and sugar. Beat in eggs, bananas and
vanilla. Combine the flour, baking soda and salt; add to creamed mixture
and mix well. Pour into a greased 15x10x1-inch baking pan. Bake at 350°
for 25 minutes or until bars test done. Cool.
For Frosting, cream butter and cream cheese in a mixing bowl. Gradually add
confectioners' sugar and vanilla; beat well. spread over bars. 3 dozen
bars.

Red Bell Pepper Burritos

2 tsp olive oil
1 small onion, minced
1 clove garlic, small, minced
1/2 cup red peppers, chopped
1 1/2 cups kidney beans, canned, drained, rinsed, mashed
1 tbs mild chili peppers, chopped
1/2 tsp cumin
1/4 tsp oregano, dried
8 flour tortillas
1/2 cup Monterey Jack cheese, shredded, low-fat

Salsa
Hot pepper sauce
Non-fat sour cream
Chopped tomatoes
Shredded Lettuce

In a medium skillet, heat oil. Add onions and garlic;
cook until soft, about 5 minutes. Add peppers and cook
until almost tender, 5 to 10 minutes. Add beans, chilies,
cumin and oregano. Heat through.

Place a tortilla in a heavy 10" skillet over moderate
heat and cook, turning frequently, until pliable. Spread
4 tablespoons of filling down the center of the tortilla.
Sprinkle with 1 tablespoon of cheese, roll up and place
in a casserole with the seam side down. Repeat with
remaining tortillas.

Heat burritos in a 325 F oven for 15 minutes. Serve with
salsa, hot-pepper sauce, sour cream, tomatoes and
lettuce. Serves 4.

Peanut Butter Cup Brownie Pizza

1 (9 x 13-inch pan size) brownie mix

Filling
8 ounces cream cheese, softened
1/3 cup brown sugar
1/3 cup peanut butter

Topping
1/2 cup chopped peanuts
15 miniature peanut butter cups, chopped

Bake brownie mix as directed on package. Cool completely.

Mix cream cheese, brown sugar and peanut butter until smooth and
spread over cooled brownies.

Sprinkle chopped peanuts and peanut butter cups on top of the cheese
mixture. Before serving, drizzle top of dessert with chocolate syrup.
Keep refrigerated. Makes at least 24 bars, but could be cut smaller.

Mozzarella Meatloaf

2 eggs
1 cup buttery cracker crumbs
1 cup milk
1/2 cup grated Parmesan cheese
1/2 cup chopped onion
1 1/2 teaspoons salt
1 teaspoon dried oregano
2 pounds lean ground beef
8 ounces spaghetti sauce
1 cup grated mozzarella cheese

Combine the eggs, cracker crumbs, milk, Parmesan cheese, onion, salt,
oregano and beef. Mix well. Shape into a loaf and place in a lightly
greased loaf pan. Bake at 350 degrees F for about 1 hour.

Drain any liquid off. Spoon the spaghetti sauce over meatloaf, then
top with grated mozzarella cheese. Bake another 10 minutes.

Chocolate Chip Caramel Cookies

1/2 cup unsalted butter
1/2 cup brown sugar
3/4 cup granulated sugar
1 large egg, beaten
2 tablespoons heavy cream
1 1/2 cups flour
1/4 teaspoon salt
1/2 cup semisweet chocolate chips
1/2 cup slivered almonds
12 caramels, cut in half flatways

Preheat oven to 375 degrees F. Lightly grease and flour a cookie
sheet.

In a large bowl, cream butter with both sugars until light and
fluffy. Add egg and continue beating 1 minute. Beat in cream.

Combine dry ingredients and add to batter, beating at low speed. Mix
in chocolate chips, almonds, and caramels. Drop small spoonfuls of
batter onto cookie sheet and bake 8 minutes. When done, carefully
transfer cookies to wire rack and let cool.

Crispy Sesame Chicken

1 cup grated Parmesan cheese
1/2 cup fine, dry breadcrumbs
1/4 cup plus 2 tablespoons sesame seeds
1 (3 to 3 1/2 pound) broiler-fryer, cut up
1/2 cup butter, melted

Combine first 3 ingredients in small bowl. Dip chicken in butter;
dredge in breadcrumb mixture. Place chicken in 13 x 9-inch baking dish.
Bake at 350 degrees F for 1 hour or until done.

Yields 4 to 6 servings.

8. French-Country Onion Tart

French-Country Onion Tart

1 pre-made pie crust (Pillsbury is one brand)
5 slices of bacon
3 Tbl of butter
2 large sweet onions (Vidalia work great). Slice very thinly. Use a mandolin
on level 1 if you have one.
4 eggs
3/4 cup of whipping cream
Salt and pepper to taste
1/4 tsp of grated nutmeg
A pinch or two of cayenne (optional)

Unroll your pastry crust and place it gently into a 10" fluted tart pan with
removable bottom. Squish the edges of the crust gently up the sides. Prick
bottom with a fork in several spots. Place in a 375 degree oven and bake for
9 minutes. It will be a light beige and dry.

While the pastry is baking, fry your bacon. When it's light brown and
crisping remove the bacon and dice. If you get some "teeny bits" don't toss
them. You can use those too.

Pour out the bacon grease but don't wash the pan. Add butter and onions.
Saute onions until loose and just beginning to brown. Stir often.

In a bowl, whip the eggs and cream. Add the salt, pepper, nutmeg and
cayenne. Just make sure the eggs are well broken up and fully mixed. Let
stand until ready to fill your tart.

Remove the tart from the oven. Set the tart pan on top of a cookie sheet so
it's sitting inside the pan. Spread the bacon bits on the bottom of the
tart. Add the onions and spread them around so they cover the bottom of the
tart. Now, slowly pour in your cream mixture. Careful not to overflow the
tart. Depending on how large your onions are you might have a bit of
cream/egg mixture left over. Just toss it or save for scrambled eggs.
Carefully transfer the tart to a 350 degree oven. Bake for 50 - 55 minutes
until the tart begins to brown on top and the when you shift the tart
slightly it doesn't jiggle in the middle.

Remove tart from oven. If the rest of dinner is ready you can serve it now.
You can also let it sit on the counter and reheat it a bit later. Although
leftovers taste great, after it's been in the refrigerator, the crust will
lose some crispness so I don't recommend baking it very much ahead. Try to
bake it while you are having cocktails before dinner.

INGREDIENTS:
1-3/4 cups and 2 tablespoons sliced cucumber
1/4 cup and 1 tablespoon sliced onion
1/4 cup and 1 tablespoon sliced green bell pepper
1-3/4 teaspoons salt
1 teaspoon celery seed
1/4 cup and 1 tablespoon distilled white vinegar
1/3 cup and 2 tablespoons white sugar

DIRECTIONS:
In a mixing bowl, combine the cucumber slices, onions,
and green peppers. In a saucepan over medium heat,
combine the salt, celery seed, vinegar and sugar. Bring
the mixture to a boil. Allow the mixture to cool for 10
to 15 minutes. Combine the mixture in the mixing bowl
with the mixture in the saucepan. Pack into sterile jars
and refrigerate for 24 hours.

You aren't supposed to put in IN the grain !!!!!!

You put a small amount near where you see an ant trail. Done correctly,
there is no contamination and no danger.

Horrors !!! Imagine spraying pesticide on your foodstuffs.. ..

- Oh. We do that all the time, don't we ?

12. A Quick Way To Decorate Cake

1 pk Marshmallows
Vanilla to taste
Green food coloring
1 pk Red hots
Box of cornflakes (4 1/2 c)
White angel food cake
Melt marshmallows, add food coloring and vanilla. Add the cornflakes,
stir until
well coated. Spread this onto a cookie sheet, shaping into holly
leaves. Place a
red hot in middle. Let dry about 5 hours. Then top a white frosted
angel cake
with the holly leaves. Makes a very pretty cake.

TATOR TOT CASSEROLE

32 oz bag frozen tator tots
1/2 cup sour cream
1/2 cup butter, melted
1 cup cheddar cheese, grated
1 can cream of chicken soup
1/2 med onion, chopped
1 cup corn flakes

Thaw tator tots and break up. Add sour cream, butter, cheese, soup, and
onion. Mix well. Spread in a greased 9x13 pan. Best if set overnight. Top
with cornflakes that have been mixed with 1/2 cup melted butter. Cook at 350
for 50 minutes.

1/2 lb bacon, cooked and crumbled
1/2 lb browned beef
1 small onion, chopped
1 cup ketchup
1 cup brown sugar
15 oz can pork and beans
15 oz cans chili with beans
15 oz can black beans
15 oz can great northern beans

Place in crockpot and cook on high for at least 2 hours.

SKILLET MAC AND CHEESE

1 lb hamburger
1 onion, chopped
1 can cream of celery soup
1/4 cup catsup
1 Tbsp worcestershire sauce
2 cup cooked corkscrew macaroni

Brown meat and onion. Drain. Add rest of ingredients. Over low heat.
Heat through.
